FOODS | Avocado and Fried Egg Toast

I follow too many foodies on Instagram. Constantly, they're posting pictures of acai bowls and avocado toast. I'm an avid fan of anything avocado--including toast--so I thought I'd show you I make mine.

You'll need:

Ripe Avocado

Firstly, fry the egg. Don't make fun of me, I like round eggs, okay?

While you egg is frying, slice open your avocado (careful of the seed!). Slide a butter knife between the edge f the skin and the insides all around the perimeter of the avocado. Then, slice it horizontally and vertically. The slices should come out easier now, and it's easier to mash up. I like the mash them up inside of the skin, to alleviate a bunch of dishes.

I lack a toaster, so I put bread in an un-greased pan on medium high heat and let it toast for about 2 minutes per side.

Then, you spread your avocado goodness on to the toast slice.

Plop on your egg and add a bit of salt and pepper.
And, there you have it, an easy and delicious breakfast, lunch or snack piece!
